Cumin Potatoes

| 3 Tbsp. canola oil, divided |
| 1 tsp. cumin seed |
| 1 tsp. ground tumeric |
| 1/2 tsp. ground coriander |
| 1-1/2 lb. cooked potatoes, cut into squares |
| 1 Tbsp. cilantro, finely chopped |
| salt and pepper to taste |
Directions:
1. Heat 2 Tbsp. of canola oil in saucepan over medium-high heat. Add cumin seeds, turmeric and coriander. Saute for 1 min. Add potatoes and sauté for 15-20 min. until reheated throughout and nicely browned.
2. Remove from heat. Drizzle with 1 Tbsp. of canola oil. Add cilantro. Season with salt and pepper. Serve immediately.
